Courgette Hummus

Courgette and mint dip

Suitable for low FODMAP diet

This recipe was inspired by Suzanne Perazzini, from Strands of My Life blog which I highly recommend if you have been advised to follow a low FODMAP diet.

This dip is a great snack to have with crudités or with oat cakes. It is healthy yet filling.

Serves 4

Ingredients


  • 2 cups chopped courgette
  •  ½ cup tahini
  •  Juice of 2 lemons
  •  1 tsp dried cumin
  • 2 tsp of fresh mint
  •  1 tsp salt

 

Method


  1. Process all the ingredients together in a food processor.
  2.  Serve with raw vegetable crudités or crackers of your choice.

Nutrition tips: Is it ok to snack during the day?

Your body will cope better if you eat three square meals a day as opposed to constantly grazing. When you opt for nutritious breakfast, lunch and dinner, you will not feel the need to snack. However, if you are struggling to balance your blood sugar levels between meals, you can opt for a healthy, high-protein snack such as this courgette hummus and crudités. If you are concerned about your energy dips, I would advise to discuss this with a nutritional therapist to identify the underlying cause.
