Smoky Courgette Hummus
This dip is a great alternative to the traditional hummus and it makes a great snack to enjoy with crudités or with oatcakes. It is healthy yet filling.
- 2 small courgettes (skin removed)
- 2 tablespoon tahini
- Juice of 2 lemons
- 1 clove of garlic
- 1 tsp dried cumin
- 1/2 teaspoon smoked paprika
- 2 tbsp olive oil
- 1 tsp salt
- Process all the ingredients together in a food processor.
- Serve with raw vegetable crudités or crackers of your choice.
