Courgette and mint dip
Suitable for low FODMAP diet
This recipe was inspired by Suzanne Perazzini, from Strands of My Life blog which I highly recommend if you have been advised to follow a low FODMAP diet.
This dip is a great snack to have with crudités or with oat cakes. It is healthy yet filling.
- 2 cups chopped courgette
- ½ cup tahini
- Juice of 2 lemons
- 1 tsp dried cumin
- 2 tsp of fresh mint
- 1 tsp salt
- Process all the ingredients together in a food processor.
- Serve with raw vegetable crudités or crackers of your choice.
Nutrition tips: Is it ok to snack during the day?
Your body will cope better if you eat three square meals a day as opposed to constantly grazing. When you opt for nutritious breakfast, lunch and dinner, you will not feel the need to snack.
